Asian Honey Chicken

This dish features ginger, soy, and honey.  The American Institute of Cancer research reports ginger contains gingerol and zingerone of which are being studied for their anti-inflammatory and antioxidant properties.

Ingredients

  • 2 Tbsp. honey
  • 2 Tbsp. reduced-sodium soy sauce
  • 1 Tsp. sesame oil
  • 4 cloves garlic, minced
  • 1 green onion, chopped
  • 2 Tsp. fresh ginger root, peeled and grated
  • 1 1/2 lbs. chicken breasts with ribs, skinless

Directions

  • In small skillet over low heat, combine honey, soy sauce, sesame oil, garlic, onion (or onion powder if you do not like regular onion), and ginger. Stir until honey melts, approx. 1 minute.
  • In medium baking pan, cover chicken with sauce until well coated. Arrange chicken breast side down, making sure they don’t overlap. Tightly cover pan with aluminum foil. Marinate 2 hours (longer is better) in refrigerator.
  • Before cooking, remove pan from refrigerator and allow it to sit at room temperature for 15 minutes.
  • Preheat oven to 350 degrees F.
  • Place covered baking pan in oven and bake 30 minutes.
  • Uncover pan and turn chicken over. Bake uncovered for an additional 30 minutes or until internal temperature is 165 degrees F. Baste or pour pan juices over chicken after 10-15 minutes.

Turkey, Spinach, and Apple Wrap

This healthy combination includes plant-based foods of which the American Institute of Cancer Research reports is a cancer fighting food.

Ingredients

  • 1 Tbsp. reduced-fat mayonnaise or substitute smashed avocado
  • 2 Tsp. honey mustard
  • 2 (8-in) whole-wheat flour tortillas
  • 2 cups baby spinach, washed and dried, loosely packed
  • 4 thin slices (4 oz.) turkey breast
  • 1/4 Granny Smith apple, sliced paper-thin

Directions

  • Combine mayonnaise or smashed avocado with mustard. Lay out both wraps. Spread the edges of each wrap with the mayonnaise or avocado/mustard mixture.
  • Arrange a layer of greens on top of wraps. Top each layer with half the turkey. Evenly divide apple slices and lay lengthwise across turkey. Fold over the end of the wrap closest to you, then the two sides. Roll the wrap as tightly as possible toward the opposite side.
  • Serve immediately or cover each wrap tightly in plastic wrap and refrigerate, seam side down. When ready to serve, remove plastic wrap and cut each wrap in half, at an angle.
