• 1 ¼ cups carrot slices-To save time utilize frozen carrots or baby carrots in the produce aisle
  • 1lb small red potatoes, each cut to desired size
  • 1 ½ cups sliced onion if desired-utilize onion powder to save time or if family members do not like regular onion
  • 1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano
  • 1 tablespoon minced garlic or 1 teaspoon garlic powder
  • 3 tablespoons chopped fresh flat-leaf parsley or 1 ½ teaspoons of dried parsley
  • Season with salt and pepper to your liking
  • 4 skinless chicken breasts (approximately 1 pound total)


  • Place all ingredients into crockpot and add water or low sodium chicken broth for a richer flavor until ingredients are covered
  • Cook on low for 6 hours
